Ingredients
- 3 cups Unsweetened shredded coconut
- 1/4 cup Almond flour
- 1/4 cup Coconut oil, melted
- 1/4 cup Honey or maple syrup
- 1 teaspoon Vanilla extract
- 1/8 teaspoon Pinch of salt
- 1 cup Semi-sweet chocolate chips (dairy-free option available)
- 1 teaspoon Coconut oil (for melting chocolate)
- 30-40 Whole almonds, blanched
- 1 tablespoon Powdered sugar (optional)
- 0.5-1 teaspoon Water (optional)

Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.

In a large bowl, combine shredded coconut, almond flour, melted coconut oil, honey (or maple syrup), vanilla extract, and salt. Mix well until everything is evenly coated.

Scoop out approximately 1 tablespoon of the coconut mixture and form into small mounds or bite-sized shapes.

Place the coconut mounds onto the prepared baking sheet. Gently press a whole almond into the top of each mound.

Bake for 15-20 minutes, or until the coconut is lightly golden brown. Let cool completely on the baking sheet.

While the coconut bites are cooling, melt the chocolate chips with 1 teaspoon of coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.

Dip the bottoms of the cooled coconut bites into the melted chocolate, or drizzle chocolate over the top. Place back on the parchment paper.

If desired, mix powdered sugar with a little bit of water until it forms a paste. Drizzle the paste over the top of the bars for a more authentic Almond Joy look.

Refrigerate for at least 15 minutes to allow the chocolate to set before serving.

- •Toast the shredded coconut in a dry skillet over medium heat for a few minutes before mixing for a deeper flavor.
- •For a smoother chocolate coating, temper the chocolate. This will give it a glossy finish and prevent it from blooming (developing white streaks).
