Ingredients
- 4 large Bell peppers (various colors)
- 1 pound Ground turkey
- 1 cup Cooked brown rice
- 1/2 cup Diced onion
- 1/2 cup Diced zucchini
- 1/2 cup Diced carrots
- 1/2 cup Diced red bell pepper
- 1 14.5 oz can Canned diced tomatoes
- 2 cloves Garlic
- 1 tablespoon Italian seasoning
- 1/2 teaspoon Smoked paprika
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 tablespoon Olive oil
- 1/2 cup Shredded mozzarella cheese

Preheat oven to 375°F (190°C).

Cut the bell peppers in half lengthwise and remove the seeds and membranes.

In a large skillet, heat olive oil over medium heat. Add onion, zucchini, carrots, and red bell pepper and cook until softened, about 5-7 minutes.

Add ground turkey and garlic to the skillet and cook, breaking it up with a spoon, until browned.

Stir in diced tomatoes, brown rice, Italian seasoning, smoked paprika, salt, and pepper. Simmer for 5 minutes to let the flavors meld.

Spoon the turkey and vegetable mixture into the bell pepper halves.

Place the stuffed peppers in a baking dish and add about 1/2 inch of water to the bottom of the dish.

Cover the baking dish with foil and bake for 20 minutes.

Remove the foil, sprinkle with mozzarella cheese (if using), and bake for another 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
