Ingredients

  • 12 oz Gluten-Free Dark Chocolate Chips
  • 8 oz Gluten-Free White Chocolate Chips
  • 1/2 teaspoon Peppermint Extract
  • 1/2 cup Crushed Peppermint Candies
  • 1 tablespoon Coconut Oil
  • 1/4 teaspoon Kosher Salt
  • 4 crushed Optional: Gluten-Free Chocolate Cookies
  • 2-3 drops Optional: Red Food Coloring (gel)

Instructions

    Line a baking sheet with parchment paper. This will prevent the bark from sticking.

    Melt the dark chocolate chips and coconut oil in a double boiler or microwave in 30-second intervals, stirring in between, until smooth.

    Stir in the salt and optional crushed gluten-free chocolate cookies into the melted dark chocolate.

    Pour the melted dark chocolate onto the prepared baking sheet and spread evenly with a spatula. Place in freezer for 10 minutes to harden slightly.

    Melt the white chocolate chips in a separate double boiler or microwave in 30-second intervals, stirring in between, until smooth.

    Stir in peppermint extract and optional red food coloring into the melted white chocolate.

    Pour the melted white chocolate over the slightly hardened dark chocolate layer and spread evenly.

    Immediately sprinkle the crushed peppermint candies over the white chocolate layer, gently pressing them into the chocolate.
