Ingredients

  • 3 cups Gluten-Free All-Purpose Flour Blend
  • 1 teaspoon Xanthan Gum
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 1 1/2 cups Buttermilk
  • 1 Large Egg
  • 6 tablespoons Unsalted Butter, cold and cubed
  • 1/2 cup Raisins or Currants
  • 1 tablespoon Caraway Seeds
  • 2 tablespoons Additional Gluten-Free Flour (for dusting)

Instructions

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a large bowl, whisk together the gluten-free flour blend, xanthan gum, baking soda, salt, and sugar.

    Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

    In a separate bowl, whisk together the buttermilk and egg.

    Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

    Gently fold in the raisins or currants and caraway seeds.

Tips & Notes

  • If you don't have buttermilk, you can make a substitute by adding 1 1/2 tablespoons of lemon juice or white vinegar to a measuring cup and filling the rest with milk to equal 1 1/2 cups. Let it sit for 5 minutes before using.
  • For a richer flavor, brush the top of the loaf with melted butter before baking.
  • The dough is sticky, so use a light touch and don't overwork it.
