Ingredients

  • 1 1/2 cups Gluten-Free All-Purpose Flour Blend
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 2 teaspoons Pumpkin Pie Spice
  • 1/4 teaspoon Salt
  • 2 tablespoons Sugar
  • 1 cup Pumpkin Puree
  • 2 large Eggs
  • 1 1/4 cups Milk (dairy or non-dairy)
  • 4 tablespoons Melted Butter or Coconut Oil
  • 1 teaspoon Vanilla Extract
  • for serving Maple Syrup
  • for serving Whipped Cream

Instructions

  1. 1

Preheat your waffle iron according to the manufacturer's instructions.

  2. 2

In a large bowl, whisk together the gluten-free flour blend, baking powder, baking soda, pumpkin pie spice, salt, and sugar.

  3. 3

In a separate bowl, whisk together the pumpkin puree, eggs, milk, melted butter or coconut oil, and vanilla extract.

  4. 4

Pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix; a few lumps are okay.

  5. 5

Lightly grease the preheated waffle iron with cooking spray or melted butter.

  6. 6

Pour the batter onto the hot waffle iron, using the amount recommended by your waffle iron's instructions.

  7. 7

Cook the waffles until golden brown and crispy, usually 3-5 minutes. Follow waffle iron instructions.

  8. 8

Carefully remove the waffles from the iron and serve immediately with maple syrup and whipped cream.

Tips & Notes

  • For extra crispy waffles, add 1-2 tablespoons of cornstarch or tapioca starch to the dry ingredients.
  • If your batter is too thick, add a little more milk until it reaches a pourable consistency.
  • To keep waffles warm while cooking, place them on a wire rack in a preheated oven at 200°F.
