- 1/4 cup Potato Starch
- 2 teaspoons Baking Powder
- 2 tablespoons Sugar
- 1/4 teaspoon Salt
- 2 Eggs
- 1 1/2 cups Milk (dairy or non-dairy)
- 6 tablespoons Melted Butter or Oil
- 1 teaspoon Vanilla Extract
- 1 teaspoon Lemon Zest (optional)
