Ingredients

  • 2 1/2 cups Gluten-Free All-Purpose Flour Blend
  • 2 1/4 teaspoons Active Dry Yeast
  • 1 tablespoon Granulated Sugar
  • 1 teaspoon Salt
  • 1 cup Warm Water (105-115°F)
  • 3 tablespoons Olive Oil
  • 1 Egg
  • 1 teaspoon Xanthan Gum
  • 1/4 cup Melted Butter
  • 4 cloves Minced Garlic
  • 2 tablespoons Dried Parsley
  • 1 teaspoon Dried Oregano
  • 2 tablespoons Grated Parmesan Cheese
  • 1/2 teaspoon Garlic Powder

Instructions

    In a large bowl, whisk together the gluten-free flour, yeast, sugar, salt, and xanthan gum.

    Add the warm water, olive oil, and egg to the dry ingredients. Mix until a shaggy dough forms.

    Turn the dough out onto a lightly floured surface (using gluten-free flour). Knead for 5-7 minutes until the dough is smooth and elastic. It will be sticky, so add a little more flour if needed.

    Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.

    Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Punch down the dough and divide it into 12 equal pieces. Roll each piece into a rope about 6-8 inches long.

    Tie each rope into a knot and place on the prepared baking sheet.

    In a small bowl, combine the melted butter, minced garlic, dried parsley, dried oregano, garlic powder and Parmesan cheese. Brush the garlic butter mixture over the knots.

    Bake for 20-25 minutes, or until golden brown.

    Brush with any remaining garlic butter mixture immediately after removing from oven. Serve warm.

Tips & Notes

  • Use a good quality gluten-free all-purpose flour blend for best results. One with xanthan gum already added is preferable.
  • If the dough is too sticky to handle, lightly flour your hands and work surface.
  • For extra flavor, add a pinch of red pepper flakes to the garlic butter mixture.
