Ingredients

  • 1 1/2 cups Almond flour
  • 1/4 cup Granulated sugar
  • 1/4 teaspoon Salt
  • 6 tablespoons Cold unsalted butter (cut into cubes)
  • 3-4 tablespoons Ice water
  • 2 1/2 cups Whole milk
  • 3/4 cup Granulated sugar
  • 1/4 cup Cornstarch
  • 1/4 teaspoon Salt
  • 4 Egg yolks
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 3 Bananas (ripe, sliced)
  • 1 cup Heavy cream
  • 2 tablespoons Powdered sugar

Instructions

    Preheat oven to 350°F (175°C). In a bowl, combine almond flour, sugar, and salt.

    Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough just comes together.

    Press the dough into a 9-inch pie plate. Prick the bottom with a fork and bake for 20-25 minutes, or until golden brown. Let cool completely.

    In a saucepan, whisk together milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until thickened and bubbly.

    Whisk a small amount of the hot mixture into the egg yolks, then whisk the egg yolk mixture back into the saucepan. Cook for 1 minute more, stirring constantly.
