- 4 Hard-Boiled Eggs (peeled and chopped)

- 1 pint Cherry Tomatoes (halved)
- 1/2 cup Blue Cheese (crumbled)
- 2 Green Onions (thinly sliced)
- 3 tablespoons Red Wine Vinegar
- 6 tablespoons Olive Oil
- 1 teaspoon Dijon Mustard
- 1 clove Garlic (minced)
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1/2 cup Watercress (optional)
