Ingredients
- 3 large Yellow Onions
- 3 tablespoons Olive Oil
- 6 cups Beef Broth
- 1/2 cup Dry Red Wine (optional)
- 2 sprigs Fresh Thyme
- 1 leaf Bay Leaf
- 2 cloves Garlic
- 4 slices Gluten-Free Bread
- 1 cup Gruyere Cheese
- 2 tablespoons Butter
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 tablespoon Sherry Vinegar

Slice the onions thinly. Melt butter and olive oil in a large pot or Dutch oven over medium heat.

Add the sliced onions, salt, and pepper to the pot. Cook, stirring occasionally, until the onions are deeply caramelized, about 30-40 minutes. Reduce heat if onions are browning too quickly.

Add the minced garlic and cook for another minute until fragrant.

Pour in the dry red wine (if using) and scrape up any browned bits from the bottom of the pot. Let the wine reduce slightly for a few minutes.

Remove the thyme sprigs and bay leaf. Stir in the sherry vinegar.
