Ingredients
- 6 cups Chicken broth (low sodium)
- 2 medium Sweet potatoes (peeled and diced)
- 1 14.5 oz can Diced tomatoes (undrained)
- 1 cup Peanut butter (natural, unsweetened)
- 1 medium Onion (chopped)
- 2 cloves Garlic (minced)
- 1 tablespoon Ginger (freshly grated)
- 1 medium Red bell pepper (diced)
- 5 oz Spinach (fresh, roughly chopped)
- 1 teaspoon Ground cumin
- 1/2 teaspoon Ground coriander
- 1/4 teaspoon Cayenne pepper (or to taste)
- 2 tablespoons Lime juice

In a large pot or Dutch oven, heat a tablespoon of olive oil (optional) over medium heat. Add the onion and cook until softened, about 5 minutes.

Stir in the diced tomatoes, sweet potatoes, red bell pepper, cumin, coriander, and cayenne pepper. Cook for 2 minutes, stirring occasionally.
